Strawberries Galore!

I went out this morning and was amazed
at how many strawberries I found.


Now to decide what to make with them before
Brigitta eats them all.

I LOVE GARDENING!

  1. We are big strawberry fans around here, but we've never grown our own. I know this sounds strange coming from me, but I have the best recipe for a green salad with strawberries. I'll send it to you if you like.

  3. Every time we go to a potluck I take this salad and I get tons of compliments. It's beautiful and delicious, and also super easy, that's why I like it. Sometimes I make it with romaine, sometimes with spinach, it's good either way. My family likes it with the almonds and feta added.

    Green Salad with Strawberries

    Ingredients
    2 teaspoons strawberry jam
    1 tablespoon balsamic vinegar
    3 tablespoons extra-virgin olive oil, eyeball it
    Salt and pepper, to taste
    1 pint strawberries, sliced
    4 to 5 cups chopped romaine or mixed greens of any kind
    optional - sliced almonds, feta cheese crumbles

    Directions
    Place jam in a medium bowl and whisk in vinegar then extra-virgin olive oil. Season the dressing with salt and pepper. Add the strawberries and greens to bowl and toss to coat evenly in dressing.
