Garden Fresh Salsa



8-10 Tomatoes, diced
1-1/2 Cups red onion, diced
5 Garlic cloves, finely chopped
3-4 Serrano chilies, finely chopped
3 Tablespoons fresh cilantro, chopped
3 Tablespoons apple cider vinegar
1 Tablespoon olive oil
1 Tablespoon sugar
1/2 Teaspoon salt
Put the tomatoes, onion, garlic, chilies, and cilantro in a bowl and mix well. Add the apple cider vinegar, olive oil, sugar and salt. Let the mixture sit for at least an hour to meld the flavors.
This salsa is great served with chips, tacos, enchiladas, fajitas and burritos.
Brigitta enjoys hers mixed with sour cream.
